Meadow Haven Farm: Monday, February 6th, 2012

Jeremy from Meadow Haven Farm will be passing through once again between 4:15 & 5:15pm. You all know the drill: bring plenty of cash and pick up some quality food.

Meadow Haven Farm thinks of food as medicine. They strive to produce the highest quality nutrient-dense food possible. Food that is not only organic (free of chemical fertilizers, pesticides, and herbicides), but also highly rich in minerals, vitamins and other nutrients. Looking at our modern meat and eggs, you’ll find they are the product of “factory farming”, where animals are kept in large confinement facilities eating very unnatural diets designed to boost their productivity, grow rapidly and be cheap to produce. Ruminates, such as beef and dairy cows, sheep and goats were created to eat fibrous grasses and plants. When forced to eat ahigh-grain diet, as on a feed-lot, they can be afflicted with various disorders for which they are then treated with antibiotics, chemical additives, hormones, medications and drugs.

Not so at Meadow Haven Farm! Chickens, ducks and other birds naturally can eat grains because they have a “crop”, but also love green growing plants and bugs. Our pastures are 100% certified organic. Paleo Pizza

CrossFit Bloomington Normal Paleo Pizza

Crust Ingredients:
½ cup coconut flour
1 cup almond meal
1 tsp baking powder
2 tsp garlic powder
4 eggs
3 tbsp extra-virgin olive oil
½ cup coconut milk

Topping Ingredients:
A few tbsp tomato pesto or of your favorite tomato sauce;
8 sun-dried tomatoes, chopped;
1 tbsp coconut oil, for cooking;
Top w/ Vegatables and Meats of choice

Directions:
1.Preheat your oven to 375 F.
2.Always begin your pizza making by preparing the crust. This is necessary for this recipe, as the crust requires some cooking time without the toppings.
3.In a large bowl, combine the coconut flour, almond meal, baking powder and garlic powder.
4.Using a whisk to eliminate any clumping, start mixing in the wet ingredients. I usually continue to whisk as I do this, because it helps prevent the dry ingredients from clumping. You will reach a point when your whisk becomes useless and your hands are necessary, generally when the mixture starts forming a batter.
5.The batter will seem quite soft and much different in texture than the usual pizza dough, but once cooked it will take the right form.
6.On a well greased and rimmed pizza pan, pour in the batter and spread it until it’s covering the complete surface. It’s important to use a rimmed pan so the batter doesn’t spill off.
7.Throw just the crust in the oven and allow it to bake alone for 15-20 minutes.
8.Meanwhile, prepare all of your toppings so that you just have to put them on once the crust has baked.
9.For the mushrooms, simply heat a pan of a medium heat and cook the sliced mushrooms with the coconut oil for 3 to 4 minutes, until they are well-cooked.
10.Spread the sauce on the surface of the crust, as much or as little as you like. Sprinkle on the sun-dried tomatoes, artichokes and cooked mushrooms and then top with the ham.
11.With the oven still at 375 F, bake the whole pizza for another 10 or so minutes, just to allow the toppings to cook. And then that’s it! Little prep, little cooking, a great pizza to enjoy with your family or friends!

Clean Living Challenge Meeting 1/28

Just a heads up that we’ll be having a meeting/Q&A session this coming Saturday at 11am for the upcoming Clean Living Challenge.

The Challenge will begin officially next Monday the 30th, and will continue thru Friday March 9th. There’s no charge to enter. We will have a male and female winner who will each receive a Complimentary Unlimited Month of Training. We will do before and after pics, measurements, and improvement in a lift and a workout. We’re not telling you what the lift and workout are yet :) If you decide to enter, you’ll need to complete the workout from Monday, January 30th, and Friday, February 3rd. If you can’t attend class on those days, we’ll have you make up what you missed at another class.

Feel free to bring whatever questions you have to the meeting Saturday, or you can post questions in the comments and we’ll answer them as we see them. I’m going to post an article tomorrow that will give you some good things to think about before we start next week, so don’t hesitate to post any questions about that either. Get ready to sleep well, eat cleanly, and throw down on a new programming cycle! PR’s and abs all over the place, son!

Clean Living Challenge 2012!!

Hey CFBN’ers! Here’s the info on the upcoming Clean Living/Performance Challenge.

Begins: Monday January 30th
Ends: Friday, March 9th

We will do before & after pics and measurements, as well as performance improvement in a lift and workout. There will be one male and one female winner who will each receive a free month membership! We will do pics/measurements and test the lift/wod the first week. You won’t know what they are until week 2 to avoid sandbagging. So if you enter the challenge, you’ll be required to complete the Strength/WoD from both Monday January 30th, and Friday February 3rd. If you’re unable to attend either class you can make it up another day. There will be no cost to enter the challenge. Most of us are adults here, do this for yourself, your family and your future, not some monetary benefit. (Except a free month)
