Sweet Potato Chips

Sweet Potato Chips

Ingredients:
coconut oil
3 large sweet potatoes
Sea salt and fresh ground pepper to taste
other spices (optional)- cinnamon, rosemary, cumin, cayenne, curry…you get the idea!

Directions:
wash and peel (optional) sweet potatoes. Slice sweet potatoes evenly and coat baking sheet with coconut oil. Arrange sweet potato coins on the baking sheet and then brush with more coconut oil on top. Sprinkle with salt, fresh ground pepper or spices as desired and bake in oven @ 350 for 30 minutes, turning regularly (time may vary depending on oven)

    I’ve had horrible luck with the fries recipe. How’d you get the taters to not be soggy?

    go about a quarter inch or so thick.

    My oven is best say 390 for for 16 min on side one and 11-12 for side 2.

    I have had to work on it a bit more since moving from olive oil to coconut oil.

    sweet, i’m interested…lemme know. I made some mashed with butter and andoille sausage and cinnamon this weekend that are yummers.
